A meringue is an item of sweet food made from a mixture of well-beaten egg whites and sugar, baked until crisp and typically used as a topping for desserts. It is bad to have egg yolk in your egg whites because it won't whip up as well.
The cake is more crumbly than most cakes whereas normally it is smooth and moist.
I thought the cake was pretty delicious and good. I wouldn't change anything about the cake.

When describing fats, unsaturated fats are better for you because they are derived from vegetables and plants.
Two examples of saturated fats are eggs and butter. Two examples of unsaturated fats are olive oil and nuts.
The Spanikopita we made in class was alright. The nutrition value in it was acceptable and healthy. Instead of using butter, you could substitute in lard or olive oil.

Pumpkin Pie
A couple things I learned at the DeVry University presentation on Monday was that there are a bunch of different careers, thousands. I learned that there is a perfect career for everyone because there are several careers that fit your own unique personality. My personality fits many different, unrelated careers. Some of which had to do with engineering, crime lab analyst, etc.
This week my group and I made reduced fat pumpkin pie with a graham cracker crust. The process of the filling and the crust are quite simple. The graham cracker crumbs come in a box all ready to mix with the butter, sugar, and cinnamon to prepare the crust; mix together well and press into pan covering the entire surface and edges. The filling includes a can of pumpkin, condensed milk, egg, cinnamon, ginger, nutmeg, and salt; whisk together and poor into crust. It's ready for you to put in the oven!!

The basics of pumpkin pie go back to writings in Medieval times sometime before the 1500's where pumpkin was stewed with sugar and spices and wrapped in pastry. The origin of pumpkin pie occurred when the colonists sliced off the pumpkin top, removed the seeds, and filled the insides with milk, spices and honey. The pumpkin was then baked in hot ashes.
Graham flour is a coarsely ground type of wheat flour that is unbleached, and less processed than whole-wheat flour.
Condensed milk was used in this recipe to make it reduced fat.

Food Inc. Movie
Kevin's Law: Food Bourne Illness: This law came around when a 2-year-old boy, Kevin, died from E. coli poisoning after eating a hamburger. His kidneys began to fail and he ended up dying within 12 days. The Centers for Disease Control and Prevention say that many people die, get very ill, or hospitalized each year from food bourne illness.
Diabetes and Obesity: High calorie, sugar processed foods are becoming a huge contributor to weight gain and unhealthy lifestyles. Bad food is less expensive because they have more calories, example: McDonalds. This is not only unhealthy, but it is a major crisis for the person eating the food.
Factory Farming: Billions of animals are raised and killed under inhumane conditions every year in factory farms. It has become very unsanitary for workers and communities surrounding, as well as our food system. Bacteria from the animals contributes to the unsanitary issue.
Pesticides: Cancers, autism and neurological disorders are associated with the use of pesticides especially amongst farm workers and their communities.
Farm Worker Protection: Farm workers are our source of our everyday meals and food. They deserve the government's protection and right to good wages and access to shade and water. Millions of mexican workers are going out of work and the government is cracking down on many more.
The Global Food Crisis: About 1 billion people worldwide do not have fair access to food, including 36 million in the US. International and national food policies have a part in creating this crisis.
Cloning: The FDA approved the selling of meat and milk from cloned livestock. It's a new thing and the FDA wants to allow the sale without labeling.

Healthy Quick Meals and Cooking with Beef
This week I made Easy Chili Rellenos. Meals can be easy/quick to make but still healthy because most healthy food are really quick to make. Healthy foods used in this recipe are cornmeal. What made it quick was that it was made with a crescent dinner roll and they are made of bread, obviously, which rises quickly. The result was very delicious and the recipe worked out very well.

Beef is healthy because it contributes to the Daily Value of many key nutrients , like protein, iron, zinc, and many B-vitamins. The leanest cut meats are whole muscle cuts.
This week I also made Beef Stir Fry. We used top sirloin beef for this recipe, it's good for grilling and stir fry because it meets the "lean" meat requirements. It's important to tenderize or marinate meat because the food acid or enzyme helps soften or break down the meat fibers and connective tissue and adds flavor. The result of this recipe was absolutely amazing. I would recommend this recipe if you ever wanted to cook stir fry.

Healthy Eating Habits, Sweet Potatoes, and Pumpkin
Healthy eating habits should be one of your most important habits. Some past diets, such as the fat free diet, the cabbage soup and grapefruit diet, and the Atkins diet, are not good for you nor your body. As people ate more and more fat-free goods, they began to get extra high doses of other ingredients that are really bad for you. The cabbage soup and grapefruit diets made you gain weight just as quickly as you lost it, and the Atkins diet seemed to produce inflammation and irritation to the body. We were all once told that chocolate, wine, nuts, salt, and coffee were extremely bad and unhealthy for you. This is found to be untrue, in some cases. They can be beneficial to your body in several ways, but if you take advantage of that, they will become a problem. Coffee is healthy because it is the number one source of antioxidants in the south. The label "Fat Free" is not necessarily a good thing. This label granted absolution to anyone who indulged and gave the illusion that portion size and sugar content didn't matter. What was lost in taste and texture had to be compensated for by adding more sodium, sugar, and thickeners. Many foods are unhealthy, or "used to be" unhealthy. Two foods that were once thought to be unhealthy are whole grains and dairy products. They are now known to have health benefits, they both can help decrease the risk of certain cancers and heart disease. In some cases, some milks are healthier and better for you than others. Whole milk isn't the healthiest for you but it might be okay to drink in moderation because it can help control weight; the calorie load swamps the health benefits. Berries have been shown to reduce the odds of cancer, diabetes, and mental decline. Exercise is obviously a great idea to keep in shape and balance your diet and the amount of food and nutrition you need. All adults should get a minimum of 150 minutes of moderate aerobic activity per week(20 min. daily), or 75 min. a week of vigorous activity, muscle-strengthening exercises two or more a week would also be healthy.

This week we made sweet potato bisque and pumpkin scones.
Sweet potatoes contain many healthy ingredients and nutrients. Some categories are antioxidants, anti-inflammatory nutrients, and blood sugar-regulating nutrients. This recipe turned out to be alright. It was not my favorite but it tasted a lot better that I thought it was going to be.

Pumpkin has several health benefits as well, some of which include alpha-carotene and beta-carotene which are potent antioxidants found in pumpkin and are pro-vitamin A carotenoids. Our scones turned out perfect. They were fantastic and a very nice treat. Although it is not part of the recipe, we added some chocolate chips to give it a little kick, which was a great choice.

Super Substitutes
The best kind of apples to use for applesauce or baking are empire apples. Some recipes you could replace fat for applesauce are cakes and muffins.
Applesauce:
http://allrecipes.com/Recipe/sarahs-applesauce/detail.aspx
The result of the applesauce was perfect. Taste exactly like the applesauce you can get at the grocery store. I think that this homemade recipe makes it taste better. Splend is an artificial sweetener used as a calorie-free sugar substitute. It is sometimes good to use for a sugar substitute because it helps cut back on calories.
Stevia is a composite herb, native to South America, whose leaves are the source of a noncaloric sweetener.
Apple Crisp:

The result of the apple crisp was excellent. Although it tasted very cinnamony, it was delicious.
